What is Farmhouse Cheddar?

Since our first cheese was produced in 1980, we have been committed to making the finest "Farmhouse" cheddar. As traditionally defined, farmhouse means that the cheese is produced:
  • from raw, unpasteurized milk that is not heated above 102°F;
  • from milk exclusively from the herd on the property where the cheese is made;
  • according to traditional methodsd, including the cheddaring process of ripening slabs;
  • only with milk, starter culure, rennet, and salt. (Shleburne Farms milk is rBST free.)
