2-Year Cheddar

Our Extra Sharp Cheddar is our best known cheddar. Aged for a minimum of 2 years, this cheese has the classic Vermont cheddar cheese profile...acid forward sharpness, some minerality, and sweetness on the back end. Great to snack on any time of year, but especially during apple picking season and deep winter days.

Eight ounce pieces are available in vacuum-sealed packaging or wax. All other pieces are in wax only. Wax has been used to preserve the flavor and quality of cheese since before refrigeration and vacuum-seal technology were common. All our cheddar cheeses achieve their full flavor potential when brought up to room temperature by removing them from refrigeration a half hour to an hour before serving.

32 oz waxed pieces: 4.25" H x 3.5" W x 3" D

Ingredients: Raw Milk, Salt, Calf Rennet, Starter Cultures
Try pairing these with dry ciders, Vermont maple syrup, and patés. which provide an excellent complement to the acid from the cheese.
