Erika works with small Vermont farmers with a focus on restorative agriculture and humane animal rearing practices. At these farms they raise heritage cross breeds without hormones and a pasture based diet. Curing salts are used minimally to allow the meat's flavor shine through. This bacon crisps up nicely and has a wonderful warm spice and maple flavor.
