Marshall's Reserve is a cave aged block cheddar. We initially age the cheese at the Farm for 1 year before sending it off to the Cellars at Jasper Hill for an additional 4 -5 months of aging and rind development. Some flavor notes are citrus and umami, think lime and soy sauce. The texture is pliant and has a flavor that is mouth watering. Like many Shelburne Farms cheddars, it has a nice minerality. Pair with Zinfandel wines, robust salamis, and sourdough breads. It is totally delectable and will be a new favorite for you, friends, and family.
