Our beer cheddar is infused with Shelburne’s own Fiddlehead Brewing Company’s flagship IPA, and Saucisson Au Fromage, a dry cured spiced salami made with locally sourced pork and embedded with Shelburne Farms’ 2-Year Cheddar, exclusively prepared for us by Erika Lynch of Babette's Table in Waitsfield, VT. Blake Hill Maple Onion Jam and Castleton Rosemary Crackers provide the perfect accents to this flavorful combination.
