This extraordinary dry cured salami is made exclusively for us by Erika Lynch of Babette's Table in Waitsfield Vermont. Erika makes this by hand in the European tradition using techniques she learned in Gascony, France, but with the wonderful addition of small bits of our 2-Year Cheddar mixed into the nicely spiced salami. Every charcuterie lover needs to try this! Only available from Shelburne Farms, quantities are limited. Each piece weighs approximately 1/3 of a pound.
